  • Chili Linguine with Scallops & Kaffir Lime

    Hungry? Here is a wonderful recipe we just discovered: Chili linguine with scallops and lime

    Why is it soooo good? Well, it is seafood based (yummy), Thai infused (extra yummy) and comes with chili linguine (come on, that is pretty cool).

    Now, it takes about 50min to make, but your taste buds and friends will thank you for it. Follow this recipe and serve an internationally infused 5 star gourmet meal….you’ll love it and be loved for it.


    3 tablespoons butter 2 garlic cloves, crushed
    6 scallions, sliced 1 red chili, finely chopped
    1 teaspoon grated fresh ginger 1 lbs. scallops
    6 Kaffir lime leaves, finely shredded Half pound fresh chili linguine
    Juice and zest of one lime 2 tablespoons fish sauce
    1 2/3 cups coconut cream 1 tablespoon soft brown sugar

    Melt 2 tablespoons of butter in a large frying pan, add the scallions, ginger, garlic and chili, and cook over medium heat for two minutes, or until the scallions are golden. Remove from pan.

    Reheat the pan to high, add the remaining butter, and cook the scallops in batches over high heat until tender. Return the scallion mixture to the pan and stir in the lime juice and zest, coconut cream, fish sauce, sugar, and leaves. Simmer for five minutes, or until heated through.

    Meanwhile, cook the pasta in a large sauce pan of boiling water until all dental, and then drain well and twist into nests onto each plate. Serve the sauce over the pasta and garnish with a few shredded lime leaves.
